Tikin Iveta's Armenian Khorovats Rub
Mix up a batch of this easy dry rub marinade, fire up your grill, add some smoky wood chips or grapevines, and cook up some Armenian barbecue to celebrate every last moment of summer!
1 tablespoon sweet paprika or other ground sweet red pepper
1/4 teaspoon ground coriander
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1 teaspoon salt
1/4 teaspoon thyme
1/4 teaspoon rosemary
1/4 teaspoon basil
1/8 teaspoon sumac
1/4 teaspoon dried onion
Grind in a spice mill or just mix together and rub all over pork, lamb or chicken, even fish. For vegetarians, try it on a variety or vegetables or tofu. Marinate for 4, or up to 12, hours refrigerated. You can multiply the recipe to make more as you like. A single recipe will be enough for 6-8 servings of meat.
